There’s nothing like a good old cheese. It is a typical product and nearly everyone has an opinion about it: either you love it, or you hate it. For me, there is nothing like a good old cheese. I can be very happily spending my money in a cheese shop where they sell many different kinds of cheeses, but my favorite remains old cheese.

Old cheese tastes like history

You can almost taste the amount of time it took to make this old cheese for you. Some cheeses go to a process of years before they arrive to your plate, and you can definitely taste that. In countries where there is a lot of history of cheese making, such as France, Switzerland and the Netherlands, you can still taste the authentic flavors of history. There, you can find places that make cheeses the same way as they did a hundred years ago. When you buy old cheese, often the label specifies how long this cheese has been aging for; the longer the time of aging, the more intense the taste of the cheese.
A modern twist

In the modern kitchen, the challenge is to use traditional products to create modern flavors. Old cheese can definitely serve this purpose. You can combine it with:
- Cranberry jam
- Mustard
- Grilled vegetables
- Dates
- Walnuts

You can think for example of a salad with cheese, dates and walnuts. If you use balsamic vinegar as a dressing, you will have a true taste explosion, using traditional products, but combining it into something new. Also as a traditional dessert, cheese can be served in an original way. Especially when they are combined with sweet flavors, the cheese will taste completely different from when you eat it on its own.
